I surprised my spouse with a trip to Aransas Oaks RV Resort for our anniversary. She thought we were going somewhere “nice but predictable”—so when I pulled into the resort and she saw the oak trees, the gated entrance, and cozy sites, she smiled with delight.
That afternoon we wandered Rockport’s shops, bought a small oil painting of a heron, and dined at a local seafood place. Back at camp, I cooked blackened fish over foil with veggie medley (zucchini, onion, bell pepper, seasoned spice blend). We ate under fairy lights strung from tree to rig.
Later we sat by the pool under string lights, listening to soft music from the clubhouse. I pulled out a small cake (prebaked) and candles—she laughed, surprised, and we toasted to many more trips.
I love that we celebrated “us” in such a simple, heartfelt way: nature, good food, each other.
