We were driving from Houston down to the Rio Grande Valley, and Aransas Oaks RV Resort became our first real stop. Initially I thought, “just one night,” but by the second evening we didn’t want to leave.
We pulled in tired, set up quickly, then walked to town for shrimp tacos and local brews. The next day, we spent a full schedule: pool in the morning, beach in early afternoon, evening campfire.
For dinner, I prepped chili-stuffed baked potatoes (baked potatoes topped with chili, cheese, sour cream, green onion) and we shared stories of road life, past travels, and plans ahead.
That night I walked to the fence and watched stars over the flat coastal land. The next morning we lingered over coffee before packing. That stopover stretched into two nights—and when we left, we promised to return for a longer stay.
