Three of us girlfriends piled into one RV and headed to Aransas Oaks RV Resort for a long weekend of laughter, rest, and coastal magic. We arrived midday, unpacked, and immediately hit the pool.
We booked a charter boat to go dolphin-watching and for shrimping. We came back with a bucket of shrimp and stories. That evening we cooked shrimp alfredo (shrimp, pasta, cream, garlic, parsley) at camp, and drank rosé under oak branches.
One morning we took a cooking class at a local kitchen (small group), learned how to make gulf fish ceviche and salsa fresca. We brought that back to the rig and had a midday snack. Afternoons were hammocks, books, wine, naps.
On the final night we dressed up a bit and drove into Rockport for a sunset dinner, then returned and roasted s’mores by the fire. We left with laughter lines, good selfies, and a vow: “We do this every year.”
